In certain recipes, I may list a particular ingredient or brand/supplier of that ingredient, but since companies often change the makeup of their products, you need to read labels carefully and in the case of gluten-free, especially if you have something like Celiac disease, I recommend that you check directly with that supplier. You are responsible for your health and wellbeing.
I personally always use the gluten-free version of any ingredients that I use in my recipes, such as oats or soy sauce, even if I forget to call it out in the recipe.
